Joseph Paire Creates New Southern Traditions at Popular Buckhead Gastropub

 

ATLANTA (Feb. 22, 2019) – Joseph Paire said he wanted to change the narrative of Southern cooking and that’s exactly what he’s doing in his new role as executive chef at The Southern Gentleman. His story just got even tastier with the launch of several new lunch and dinner dishes.

 

“When it comes to Southern cuisine, fried chicken is a perennial favorite,” Paire says. “While I can’t share my recipe secrets, I can invite guests to sample it at lunch and dinner. Between the delicate crunch and cooked-just-right meat, it’s a bite that delights. The braised greens and mac n cheese that accompany it hit the perfect notes.” Paire’s fried chicken is featured on both the lunch and dinner menus ($22) along with a new winter kale salad served with a chilled poached egg, aged white cheddar and sherry-mustard vinaigrette ($12).

 

The lunch menu also features:

 

·        Fried pork cutlet - white bread, pickles and mustard aioli ($12)

·        Muffuletta - salami, ham, mortadella, coppa, olive salad and aged provolone ($15)

 

For dinner, guests can look forward to:

 

·        “Hot” catfish bite - potato roll, buttermilk dressing and pickled shallot ($4)

·        Pickled fried green tomatoes - smoky blue cheese sauce ($8)

·        Smoked beet salad - farmstead cheese, glazed pecans and Meyer lemon vinaigrette ($9))

·        Mussels - smoked whiskey sauce ($11)

·        BBQ beef rib - cornbread, baked beans and fennel slaw ($36)
