Chef Michael Kubik's Thanksgiving Turkey Apple Tarragon Brine

Apple Tarragon Brine

  • 4 cups Apple Juice

  • 4 cups Water

  • 2 cups Cider Vinegar

  • 1/3 cup Kosher Salt

  • 1/3 cup Black Pepper

  • 2 Bay Leaves

  • 1 Tbsp Tarragon

  • 2 Celery Stalks

  • 1 tsp Cayenne Pepper

Bring all ingredients to a boil and let cool to room temp. Place the turkey in a large pot, pour the brine over it and fill the pot with cold water to cover the turkey.
