Catch you “Nap-a-ing”? Daydreaming of immersing yourself in Napa Valley wines and a fabulous farm-to-table menu? Easy enough, even on a Thursday night. Head out to the porch at Milton’s Cuisine & Cocktails for a Spring & Vine Wine Dinner on April 19. From 7-9 p.m., chef Derek Dollar creates a four-course menu highlighting spring’s fresh flavors, complemented by wines from Trefethen Family Vineyards. Courses and pairings progress through ahi tuna crudo with green apples, avocado, red curry-lime ponzu, benne seed crackers and micro wasabi paired with Trefethen dry riesling; Alabama royal red shrimp on buttered brioche with celery leaf, lemon-thyme aioli, pickled mustard seeds and baby pea tendrils joined by Trefethen chardonnay; veal chateaubriand steak with golden potato puree, grilled ramps, loudmouth mushroom caps, pink peppercorn and goat cheese gremolata served with Dragon’s Tooth malbec blend; and a sweet ending of chocolate caramel tart with crushed hazelnuts and smoked sea salt paired with Trefethen merlot.
